It helps prevent gas and fermentation of food in the digestive tract. It improves the appetite and digestion. It is good for nausea and vomiting. In animal experiments, the essential oil eugenol, has been shown to inhibit medicinally induced diarrhea and slows down the transport of active carbon in the gastrointestinal tract. In addition, effects on protaglandin synthesis and antimicrobial effects have been demonstrated. Therefore there seems to be some evidence for the use of nutmeg for dysentery and rheumatic complaints. Guest guest
Use in recipes you might want to use cinamon with, but use very sparingly, it is pretty potent. I find it complements cinamon quite well, and can reduce cinamon a lot, accordingly. Any of the apple pie recipes that have been posted could use a dash of nutmeg here and there. That said, there are warnings at some health food places on use of nutmeg during pregnancy - not sure what that is all about...On 10/14/06, Gayla <aeranch@...> wrote: With apples, in grated Hubbard squash or pumpkin salad, with lemon on dried zucchini chips. Guest guest
Before spices came to be called spices they were used as herbs or food. All spices have, as they say, medicinal qualities that lend themselves to the herb or spice or even food.
