Guest guest Posted October 18, 2004 Report Share Posted October 18, 2004 Hi Michigan group - First I would like to say how happy I was to see how wonderful everyone is doing at the follow up appointment/clinc held at Dr. Doroghazi's office today. Everyone looks great. I mentioned to the earlier group that I would share the pecan recipe I have. I do have to confess that when I looked at the recipe I lied. There's sugar in this recipe. My husband mixed this one up for me and it has been a long time since I did it. Anyway, someone mentioned that Splenda may work as a sugar substitute. I am going to try it. It tastes good anyway, but I had said how surprised I was that it had no sugar. WRONG... COATED PECANS 1 LB Pecans 1 Egg White 1 TBSP Water 1/2 Cup Sugar 1/2 tsp. Cinnamon 1/4 tsp. Chile Powder 1/4 tsp. Allspice 1/4 tsp. Salt Beat the heck out of the egg white. Then add water. In a separate bowl mix all fo the dry ingredients. Then mix egg white and water with the dry mixture. Add the pecans and mix until coated. Bake coated pecans on greased cookie sheet (I coated pan with Pam while Dave was mixing). Bake 2 hours @ 250 degrees. During the 2 hours stir every 20 minutes. I think I will add less sugar and see if it still is as good, A little sugar should be fine,,it is the 24 cupcakes that is not !!
