I use an electric meat slicer (yes, I know) that we've had in the basement for about 20 years. I set it to about 1/4 inch or a little larger, line three tomatoes up (stem end sliced off) and slice away. I can dry a full dehydrator in two days and if I have a lot of tomatoes (not this year) I will pull them off the trays when they still have a bit of moisture in them and put them together (about three trays worth) to finish drying and add fresh tomatoes to the now empty trays.
