Guest guest Posted July 30, 2006 Report Share Posted July 30, 2006 As long as we're on the corn kick, here's one of the first raw recipes I ever made from "Raw Gourmet" by Nomi : MEXICALI CORN SALAD By Nomi 2 cups fresh corn kernels ¾ cup chopped red pepper ½ cup chopped scallion ¼ cup chopped cilantro 4-5 green olives, sliced 2 tablespoons lemon juice 2 tablespoons extra-virgin olive oil celtic sea salt to taste, optional ½ teaspoon ground cumin pinch cayenne, to taste In a small bowl, combine the corn, red pepper, scallion, cilantro, olives, lemon juice, olive oil, salt, cumin, and cayenne.
