Starting to make seeds, but definitely immature. Out of curiousity I tried one of the seeds. Wow!! GOOD!!! Sweet and crunchy. So if anyone has pumpkins that won't mature by winter, think about the immature seeds for snacking, or adding to salad or whatever..
