Guest guest Posted August 29, 2006 Report Share Posted August 29, 2006 In my last post, I said that I have trouble with eating raw, although I am convinced that it is the #1 most healthy way to eat. :-) So I am sending this recipe because not only will it appeal to generally health-conscious people, but also hoping that one of you raw people will tell me if there is a way to make this a raw recipe? It sounds delicious, but I know that it would make me sick. :-) Thanks much, TerriLynne Black Bean Burgers 3 cans black beans, rinsed and drained 1 medium onion, chopped 1 1/2 cups uncooked rolled oats 3/4 cup fresh cilantro, chopped 2 tbsp jalapeno peppers, seeded & minced 1 tsp salt 2 large eggs, lightly beaten 1/4 cup all purpose flour 1/4 cup yellow cornmeal 1 tbsp vegetable oil Mash beans with fork, leaving a few whole. Add onion, oats, cilantro, jalapeno, salt and eggs. Mix well. Shape into 8 patties. In medium bowl, combine flour and cornmeal. Dredge patties in mixture. Heat oil in skillet over medium heat. Add patties and cook 5 minutes each side until lightly browned. Place on a bun with lettuce, tomato slice, cheese or salsa if you like. I would add: 1 or 2 green onions, chopped 3/4 cup cilantro 2 tsp jalapeno 1 tbsp olive oil 1/2 tsp cumin, optional Blend and serve on lettuce leaves like a sandwich. The taste is not the same as cooked, but that flat starchy taste is lessened by soaking, and they are softer for the blender.
