Guest guest Posted July 31, 2006 Report Share Posted July 31, 2006 Quick and Easy Red Bean & Bulgur Soup 1 Tablespoon Eden Extra Virgin Olive Oil, or Organic Safflower Oil 2 cloves garlic, minced 1 medium onion, diced 1/3 cup celery, diced 1/4 cup green pepper, diced 15 ounces Eden Organic Small Red Beans, 1 can, do not drain 15 ounces any Eden Organic Crushed Tomatoes, 1 can, do not drain 1-1/2 cups water 1/2 teaspoon Eden Sea Salt, or to taste 1/2 teaspoon dried basil 1/4 teaspoon dried oregano 1/3 cup organic bulgur 1/4 cup fresh parsley, minced Heat oil in a medium saucepan and sauté the garlic and onions for 1 to 2 minutes. Add the celery, carrot and pepper. Sauté another 3 to 4 minutes. Add the beans, tomatoes, water, sea salt, basil and oregano. Cover and bring to a boil. Stir in the bulgur and bring to a boil again. Reduce the flame and simmer for 20 minutes until the bulgur is tender. Add the parsley, stir and serve.
