Sharyn...the tomatoes "straight from the garden" is a sore subject with me right now. Still trying to track down the criitter(s) that ate them!!

Do you have a spiralizer (Saldacco)? You can make zucchini "pasta" and eat it with fresh tomato sauce straight from the garden. Scrumptious!

Fusilli With Zucchini, Chick Peas And Sun-Dried Tomatoes

Serving Size : 6

1/4 cup olive oil

2 cloves garlic -- minced

2 cups peeled and diced tomatoes

1/4 cup sundried tomato julienne

1 teaspoon dried oregano

1 pound zucchini -- diced

Salt and pepper

15 1/2 ounces cooked chick peas -- well rinsed

1 pound fusilli Heat olive oil in a skillet.

Add garlic and saute until fragrant.

Add tomatoes, raise heat to moderately high and cook, stirring, until they collapse and form a sauce, about 10 minutes.

Add sun-dried tomatoes and oregano and simmer 2 minutes.

Add zucchini, salt and pepper. Add 1/4 cup water, cover and simmer gently until zucchini are tender, about 10 minutes.

Stir in chick peas. Boil fusilli until al dente.

Drain and transfer to a bowl.

Add sauce.

Toss, then serve. Serves 4-6.

String Beans And Zucchini Curry

Serving Size : 4

1/2 Lb Fresh string beans

1/2 Lb Fresh zucchini

1 Lg Onion

1 Tb oil/margarine

1 T Cumin

1 T Coriander

1/2 Ts Turmeric

1/4 Ts Chili powder

1/2 Ts Garlic powder

1/4 Ts Dark mustard seeds

Salt, to taste Wash the string beans in water. Snap the stems off. Break beans into 2 inch long pieces. With a vegetable brush, clean the zucchini thoroughly under some running cold water. Cut and throw away both ends of each zucchini, and cut into small rounds. Peel and cut onion into small pieces. Over a medium heat saute the onion in butter or margarine. When the onion is soft, add mustard seeds. When seeds start jumping, add turmeric, cumin, and coriander powders. Saute onion again until it is fully covered with spices. Add string beans first. Mix and cover them for 4 minutes. Then add zucchini next. Stir the pan. Add chili powder, garlic powder, and salt. Cook for 8 to 10 minutes. Serve hot or warm as a side dish.

Slicer them, season and dry. Zucchini chips. I think Wildmouse posted a Middle Eastern seasoning that sounded made for zucc chips.

Do you know why people in the country lock their car doors in the summer? So they don't get filled up with extra zucchinis! LOL

LOL! Where I live it's tomatoes and zucchini! I love the stuff but need to find lots of ways to prepare them. Half of one shelf in my fridge are zucchini as big as submarines. When I see someone selling them 5/$1.00 my eyes get wide as saucers and I buy all five! Then I get home and have no idea what I'm going to do with them!!! ;-)GloriaGloria
