Guest guest Posted July 7, 2006 Report Share Posted July 7, 2006 Better than potato salad #1 3 cups cooked brown rice 1 cup mayonnaise 2 hard-boiled eggs, chopped 1/4 cup sweet pickle relish 1/4 cup chopped onion salt & pepper 1 ts mustard Combine all ingredients, mix thoroughly and chill. Yield: 6 Servings *** Better than Potato Salad 4 cups cooked long grain rice 8 radishes, sliced 4 eggs, hard-cooked and chopped 1 medium cucumber, seeded and chopped 2 cups celery, sliced thin 1/2 cup onion, chopped 1-1/2 cups mayonnaise 3 tb prepared mustard 3/4 ts pepper In a large bowl, combine rice, radishes, eggs, cucumber, celery and onion. Combine mayo, mustard and salt; mix well. Pour over rice mixture and toss. Cover and refrigerate at least 1 hour. Cool. Combine mayonnaise, onion, mustard, and salt. Stir into rice. Cover and thoroughly chill. Stir in cucumber and radishes just before serving.
