Guest guest Posted July 7, 2006 Report Share Posted July 7, 2006 Zucchini and Cheese Enchiladas 8 corn tortillas Olive oil 2 med. zucchini, sliced 1/4 c. onion, chopped 1 sm. can green chili 1 can whole pitted black olives 1/2 to 3/4 lb. Monterey Jack cheese Enchilada sauce (recipe follows) Make Enchilada sauce. Saute zucchini and onions in olive oil. Pour some sauce in the bottom of an oven proof 8x11x2 inch dish. Heat the tortillas one at a time for approximately 30 seconds in the microwave long enough to soften so they roll without breaking. Too hot or too long, then they get too stiff). Dip warmed tortillas into sauce. Fill with small amounts of zucchini mixture, cheese, olives and chili. Roll the enchilada and place in dish. When you have filled the dish with 8 enchiladas, top the dish with the remaining cheese, olives and chili. Pour the remaining enchilada sauce over the entire dish. Bake 15 to 20 minutes at 350 degrees. Enchilada sauce: 1/2 c. onion, chopped 1 clove garlic, minced 1 tbsp. olive oil 1/2 c. vegetable stock 1 c. tomato puree 2 tsp. chili powder add more if desired to suit taste 1 tsp. cumin Salt and pepper, to taste Saute onion and garlic in oil. Add the remaining ingredients, bring to a boil an simmer for about 1/2 hour. (1 can tomato paste can be substituted for the tomato puree. Guest guest Posted July 10, 2006 Report Share Posted July 10, 2006 I've given up fats (olive oil, avos, nuts, etc...) for something I am doing with a group of people and I didn't realize how much I miss the fatty stuff. I gave up salt, sugar and fats...have maybe less than a tbsp. of olive or flax oil per day on a salad. The salt was the hardest to give up. I mean NO salt at all. When I gave up ALL fats/oils I got constipated. I was drinking juices, basically all raw food but suddenly had a terrible bout with constipation that lasted for 2 days. I've given up fats (olive oil, avos, nuts, etc...) for something I am doing with a group of people and I didn't realize how much I miss the fatty stuff. Guest guest Posted July 10, 2006 Report Share Posted July 10, 2006 I'm actually doing some fats, but limited in making choices on quantity and when.......salads do have olive oil, sometimes I vary it and make a tahini dressing when not lazy..sometimes avo in the salad without the olive oil but just veggies...quick and fast is my goal..now do visit Whole Foods for some of their prepared foods, vegan, so I know they have oil in their foods...not going crazy over the W.Foods either...a choice....Prefer raw, vegan as I have found it so simple that making my lunch can take up to a minute ...not much to do...yes, loving the food processor too for slicing up cauliflower as my teeth have been challenged still so do what is easy all around...I do same with eggplant when cooking it however...saves even time when cooking to do it this way............... carolgSV <shavig@...> wrote: Thanks.
