Substitute almond milk or kefir and enjoy!

> Mint And Yogurt Refresher

> Yield: 4 servings

> 1 cucumber, peeled, seeded and cut into chunks

> 24 ounces plain yogurt

> 3 teaspoons chopped green onion

> 1/2 teaspoon ground cumin

> 1/2 teaspoon ground coriander

> 2 teaspoons chopped fresh mint

> 2 cloves garlic, chopped

> Salt

> Ground pepper

> 1/4 teaspoon grated lemon zest (colored portion of peel)

> 4 teaspoons lemon juice

> 4 fresh mint sprigs, for optional garnish

> In a blender, combine cucumber, yogurt, green onion, cumin, coriander,

> chopped

> mint, garlic, salt and pepper to taste, lemon zest and lemon juice.

> Puree until smooth. Refrigerate until cold, then adjust salt to taste.

> Garnish each serving with a mint sprig.

>

> Per serving: 119 calories; 3g fat (23 percent calories from fat);

> 1.5g saturated fat; 10mg cholesterol; 9g protein; 14g carbohydrate; 13g

> sugar;
