I used to sprinkle the vinegar on the potatoes while still hot. Cool then add the rest. I also grated a half of a red onion and let the flavors sink in overnight.

Italian Potato Salad5 large potatoes, peeled and chopped 2 cloves garlic, minced 2/3 cup extra virgin olive oil 1/2 cup white wine vinegar 1/3 cup chopped fresh parsley - Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and chop. - In a large bowl, mix together the garlic, olive oil, vinegar and parsley.
