CAMOMILE Camomile is the most demanded medicinal herb throughout the world. It is used in many skin care products such as creams, lotions, soups, toothpaste and many others. Camomile tea is widely used because of its beneficial effects; Medicinally, it is effective as mild hypnotic and sedative and also is good for stomachache. In care products, its extract is used as a tonic and brightner of light colored hair. The infusion can also be used as rinse to clean the face. This has been discussed a few weeks ago, and the consensus was that

teas high in essential oils -- especially antimicrobial ones -- may

cause problems if brewed straight. However, one member was going to

run a test batch or three . . . any news yet?

You'll have to consult an herbal reference to be certain, but as a

general rule of thumb, highly-aromatic teas have higher concentrations

of essential oils. For instance, mint, catnip, and chamomile all

contain high concentrations of essential oils. These teas may or may

not -- in varying proportions -- adversely affect kombucha growth.

They're almost certainly suboptimal when cultured in isolation, though

testing would be required to determine what proportion mixed with tea,

rooibos, or some other non-oily base tea isn't a problem.

I received my copy of the famous " Kombucha " book by Guenther W.

today. It contains a list of all the herbs and their volatile oil

content.

Sage, peppermint, camomile and st-johns-wort are his examples for

herbs you should not use for kombucha.

But how about brewing with black or green tea and then do a second

fermentation with camomile flowers added? Would that work? Would you

then get the benefit of kombucha and the herbs?

Hanni... definitely has a good point...you may want to consider adding

your camomile to a second ferment.
