Satay Sauce

200m/7ozs coconut cream[100%coconut]

60ml/4tbls crunchy nut peanut butter no added sugar [Whole earth from any

health shop]

Few drops Tabasco Gently heat coconut cream 2 mins. Add peanut butter

stirring vigorously heat gently do not boil. I use few drops chilli oil to

tasteAdd chilli to taste Serve with chicken kebabs.

Electrolyte Popsickles

Take the recipe for the Electrolyte drink

1 quart boiled water

2 tbsp. honey

1/4 tsp. of salt

1/4 tsp.baking soda

Can be kept in refrigerator for 24 hours, and then a new batch should be

made. Put the ingredients in a mold with a popsickle stick in them and

freeze.

Gelatin Recipe

Put 1/4 cold water in a 1-quart bowl and sprinkle the envelope of Knox plain

gelatin (1 Tablespoon) on top and let it soften. Stir in 3/4 cup of boiling

water and honey " to taste " (I don't use

any). Stir to mix well. Add one cup of fruit juice and stir again. If you

want to put it in a mold, oil the mold and pour in your jello mixture.

Chill until set. Or, if you want fruit in your jello, add 1-2 cups of fruit

when it just starts to set and then continue chilling until completely set.

6 servings.

Crunchy Nuggets

1- First I made the cooked mayonaise from the pecanbread website

COOKED MAYONNAISE by Marilyn

2 egg yolks

2 tablespoons fresh lemon juice

2 tablespoons water

1 teaspoon honey

1 teaspoon dry mustard

½ teaspoon salt

¼ cayenne

1 cup safflower oil

In a small saucepan, stir together egg yolks, lemon juice, water, honey,

mustard, salt and cayenne with a wooden spoon until blended. Place over very

low heat and stir constantly until it bubbles in one or two spots. Remove

from the heat and let stand 4 minutes. Pour into a blender and blend, slowly

adding the oil in a thin, constant stream. Scrape down the sides as needed.

When the mixture in thick and smooth, chill until ready to use.

Tip: Mayonnaise keeps 3-4 weeks in the refrigerator as long as only CLEAN

utensils are dipped in it. Put a " due " date on the container.

2- Then I boiled a pound of boneless chicken breasts.

3- Finely chop the chicken in a food processor.

4- Mix the chicken, mayonaise, salt, and pepper to taste.

(Basically you are making chicken salad)

5- Form spoonfuls of the chicken mixture into " nugget " shapes.

6- Bake at 350 degrees for 35 minutes.

They come out crispy! Zack just loved them. Great dipped in homemade ketchup

too!

Butternut squash and Brie mash

3 cups butternut squash, peeled, deseeded and diced

2 oz. butter

1 cup Brie cheese slices

1 large clove garlic, finely crushed

1 tsp. salt

1 tsp. black pepper

parsley sprigs to garnish

Melt butter in a pan. Add squash and cook for 10 minutes. Add garlic, salt

and black pepper. Fry for 3 minutes until aromas become strong. Using a food

processor, puree squash mixture and Brie cheese slices. Reheat in pan and

serve hot, garnished with parsley sprigs, as an accompaniment to roasted or

barbecued poultry. Serves 4

Recipes for Holidays

~Souffle bread (found in Grain Free Gourmet) topped with cooked apple and

cinnamon. This is nice warm or cold.

~If you can tolerate a little bit of honey, you can make cinnamon rolls by

cutting the souffle bread into strips --- drizzling a tiny bit of honey ---

sprinkling some cinnamon and rolling them up.

~Make crepes: Just whisk eggs and cook in a pan (very thin) as if you are

making an omelet. Let cool and roll up with cooked fruit inside.

~Cooked peaches (makes a nice yogurt topper).

~Cooked apple and ______ fill in the blank (berries, pear, peaches, etc.)

It's nice with a little butter cooked into the mixture.

~If you can tolerate spices, then you might try a spiced fruit recipe. Mix

oranges, bananas, grapes, etc. with cinnamon and nutmeg for a tasty cold

fruit salad (topped with yogurt). Or you can add some spices in when cooking

fruits on the stove or in the oven.

Try cutting up some fruit (apples, pears, pineapple, etc.) and bake them in

the oven with cinnamon and nutmeg sprinkle on top. Grated orange peel would

make a nice flavor on top of baked fruit as well.

~Pears cooked in wine. I found this on southernfood.about.com. The original

recipe called for sugar but you could use honey instead (or your could leave

the honey out altogether).

3/4 cup water

1/4 cup very dry red wine

1 stick (3 inches) cinnamon

1/8 teaspoon ground nutmeg

pinch salt

2 teaspoons honey

2 thin slices lemon

4 ripe pears, halved lengthwise, peeled, cored

In a saucepan, combine water, wine, cinnamon, nutmeg, salt, honey, and

lemon. Heat over medium low heat until mixture begins to boil. Add pears and

cook, covered, over low heat for 15 to 30 minutes, or until pears are

tender.

Cool and refrigerate for at least 2 hours to chill thoroughly. Serves 4 to

6.

~Homemade smoothies (or ice cream if you have an ice cream maker) using

yogurt and fruit (bananas are a nice sweetener if you can tolerate them).

Also -- a big word of caution... do not overdo the fruit! If you have a low

tolerance for honey, than eating too much fruit might cause a problem for

you as well. Just remember to stay balanced.

Dessert Topping

I drip my yogurt, but I save some of the whey in case I want a less dense

yogurt for some uses. Today I took about 3 teaspoons of the whey, crushed

2 tablets of saccharin in it, and added enough dripped yogurt to make the

consistency of whipped topping or whipped cream. I gently stirred them

together, and put it on top of a serving of homemade grape juice gelatin.

Fruit Crisps

Fill a baking dish with any kind of fresh or frozen fruit (apricots are

delicious). Bake at 400F until the fruit is melted, then pour about 1/2 cup

(or more to taste) honey and 2 Tbsp lemon juice over the fruit. Mix up 1

Tbsp melted butter or coconut oil with one cup ground almonds or other nut,

add some cinnamon or nutmeg and sprinkle it over the fruit. Bake another 20

- 25 minutes and you have a lovely fruit crisp. I always serve it with

yogurt!
