Guest guest Posted April 28, 2001 Report Share Posted April 28, 2001 Anyone wanting a souper (lol gotta love me I get my kicks easily!) easy lunch or dinner, here it is Chicken drumsticks, one per person (or thighs) 1 can chicken broth 1 can diced tomatoes 1 can mixed veggies your choice of noodles ( I used Rotini), depends on how many pieces of chicken, I used 1/2 cups per piece of meat up to ya) 1/3 of an onion diced seasonings Put chicken, diced tomatoes, broth and onions in a pot and bring to a boil. Add seasonings that you like: I chose italian seasonings, 1 tbsp., garlic salt 1 tsp, black pepper, coarsley ground, about 1 tbsp. 1 tsp salt and a touch of chili powder. Boil for 20 minutes or so (until meat looks close to done)...stir in can of veggies (drain first) and noodles. Cook covered for about 10 minutes, until noodles look done. VERY VERY GOOD AND GOOD FOR YOU! MY 13 yr old wanted seconds, so that's a big plus! If I hadn't have thrown it together this afternoon, I'd have had some parmesan to grate on it, or a little provolone..yummy.
