For those who find VCO hard to get down the hatch...I have found the

cure.

I've just discovered by accident the best ever spread for toast using

VCO.

You put 3 tablespoons of VCO in a small shallow bowl with 1

tablespoon of your favourite honey.

Here in Australia we have whats called leatherwood from Tasmania and

its the best honey !

So you have all these in a bowl...then put this in the freezer. You

wait 3 min till it just starts to solidify.Honey and oil dont mix at

room temp...so when the VCO is nearly totaly solid...you mix it

properly which it will do...and both become one.

Then back in the freezer for another 2 mins.Dont let it go REALLY

solid, just solid enough to spread it well like thick butter.

This is the best creme-VCO-honey spread I have ever had(and I used to

keep bees)..it just melts in your mouth and it TOTALLY de'lish on

toast!!

I will never find VCO hard to eat again !

I will now live on toast FOREVER !

I'm so thrilled we can get it in the States. Can't wait to try your

suggestion!

I think Tasmania is the only place in the world where the leatherwood

tree is...and would you believe it,the damn Tasmanian Goverment is

allowing logging to go places where there is rare old leatherwood

trees, and these are being chopped down with old growth trees.

They have just signed a new contract for woodchipping that will make

sure this will happen.

WOODCHIPPS for trees 100's of years old!

Bl**dy makes me sick.

This means that in about 20 years...if that...leatherwood honey will

be rare.

Bee keepers have been protesting for some time, but are not being

listened to.

They say that in 10 years, bee keeper numbers will be cut by 75%

because there wont be enough trees to go around !

This is a huge issue in Tasmania, but the goverment just wont listen.

They got in at the last election on the promise that the new

woodchipping contract would be signed ensuring jobs.
