Refined carbs like white rice and fruit will jack your sugar up fast - it also plummets fast too, causing you to get hunger cravings - and thus the hunger/hypoglycemia cycle begins. If I were you I would take it easy on the white rice or give it up, period - or if you must have rice, switch to brown rice, which is a whole grain and a lower glycemic value, which will cause a more gradual rise and fall of your blood sugar. But for me, diabetic meds were poisoning me. When I was on diabetic meds (glyburide) I could " cheat " and eat foods which were not good for me. I also had low blood sugar sometimes & then had to add more sugar to my diet to compensate. Diabetic meds really beat-up the pancreas to make it produce more insulin. Long-term, even if one *never* cheats, one's pancreas wears out much sooner when one takes diabetic meds. I also found the recommended diet for diabetics was dangerous. Far too many carbs. So I monitored my blood sugar level a lot, and slowly changed my diet. When I had a feel for what I was doing, I stopped taking the glyburide. I took glyburide for 6 months while I adjusted my diet, added lots of vitamins & supplements, and did a ton of research. When I stopped taking the glyburide, my doctor was dead-set against my experimentation. Without the glyburide, I *never* have low blood sugar, so there is never a need to add more sugar to my diet. And I see a jump in blood sugar whenever I stray off my diet, so I am better able to resist the temptation to cheat. For me, coconut oil taken at night assists me to keep my morning blood sugar levels in balance. But it has never over-compensated. Of course, the coconut oil must be used in conjunction with a healthy balanced diet. No bread or rice or pasta. Minimal fruit. No fruit juices. No foods with hidden sugar (like pre-packaged foods with sweetener inside). Four balanced meals each day with no snacking whatsoever. The emphasis is on balanced meals. I also take fiber 3 times a day to provide bulk & keep my bowels running smoothly. I can write more about what supplements I take, but I am not sure how off-topic I should go on this list. Actually i am beginning to eat more sauteed veggies and am beginning to like them. Thanks for the warning. and i thought the american diabetic diet was good.
