Stuck,

Unsaturated oils heated to excessive temperatures or reheated over and

over oxidize and harden forming a hard coating with is the equivalent to

varnish. If you don't wash your pans unsaturated oils can build up a

coat of this varnish. Sometimes people wash only the inside of their

pans and ignore the outside. It is usually the outside/bottom of the pan

where this varnish generally forms. You can prevent this by using

saturated fats in cooking, or washing both inside and outside of your

pans after every use. You can also remove the hardened buildup with a

scrubber. Dr. Fife's Non-Stick Cooking Oil, which contains lecithin,

will not form this buildup. Dr. Fife's Non-Stick oil is available in

your health food store or from www.simplycoconut.com.

lecithin I am told will build up on your pans and eventually ruin your

cookware? is this true? I have VERY expensive cookware so don't want to

take a chance. Thanks for any insight :)
