And another, but from a different source.

Same ingredients except substitute low fat sour cream mixed with a half a

package of dry ranch dressing (dressing is optional) for mushroom soup

Stir fry chicken and then vegetables in olive or vegetable oil.

Spread tortillas with a thin coating of sour cream mixture. Add other

ingredients and top with salsa and cheese. I guess you could add salsa to the

stir

fry.

It makes a quicky healthy sandwich.

Monterey Chicken Fajitas Recipe

Since I started treatment, Roche would send me a monthly newsletter...and in

each one would be a liver healthy recipe. Was cleaning some piles today and

found one with the following recipe.

Monterey Chicken Fajitas

(Makes 6 Servings)

Ingredients

One package (9oz or 2 cups) frozen fajita chicken strips

One can (10-3/4oz) 98% fat free cream of mushroom soup

½ cup chunky salsa

1 tbs virgin olive oil

One medium green pepper cut into strips

One medium onion sliced

Six 8 inch flour tortillas

1 cup shredded Monterey Jack cheese

Directions

In a large skillet, heat oil. Add pepper and onion and cook until

crisp-tender. Add chicken, soup and salsa. Cover and heat though;

Spoon about ½ cup chicken mixture down center of each tortilla. Top with

cheese and additional salsa. Fold tortilla around filling.

Nutrition information per serving. Calories: 336; fat 17 g (calories from fat:

39%); cholesterol: 49mg.; proteine:18g; carbohydrates: 28 g; sodium: 131mg.
