Guest guest Posted March 15, 2008 Report Share Posted March 15, 2008 I tried this recipe tonight and it turned out great! I am a dump cook so measurements are approximate. 4c. Shredded zucchini 4-6 eggs Salt Pizza seasoning herb blend Pepper Mix all above and bake in 350 F oven in a 9 X 13 pan for about 20 minutes or until about set. In the mean time: Fry up about 1 pound hamburger, can add onion, peppers or other vegetables and more seasonings. Then add tomato sauce, or chunk tomatoes with chilies. Put this mixture on the top of egg mix and put back in oven to just heat. When done sprinkle with nutritional yeast for a cheesy taste. Enjoy! The only changes I made was: I Added 4T. beef liver to half the amount of ground beef, and I also used about 4 cups shredded zucchini with the 6 eggs. This is a keeper!!!
