Guest guest Posted December 29, 2006 Report Share Posted December 29, 2006 When I started with sugar-free inulin and boiled the crap out of it in the microwave to gel it, it did get more sweet. Similarly, when you roast onions or thistle root, they get sweeter as the inulin breaks down a little But boiling at a normal temperature doesn't break inulin down much, and I think that'a how the inulin is extracted in the factory.
