Hello Group,

I'm a new member, just purchased a 7.5 liter (2 gal) Harsch crock. I live in

Central Texas, a very warm/hot climate spring through early fall...so...does

anyone in the group have tips to share for using this crock in warmer conditions

when kitchen temps hover around 74 degrees.

Anyone have recipes for sauerkraut to share? I just love kraut but haven't

found any really good old fashion tasting kraut since my high school days (let's

forget when that was) when I volunteered at a home for retired ladies - the cook

(of German heritage) made her own kraut in the basement...kraut, taters and

sausage, what a feast!

I would also love to explore fermented veggies of all types. I have a large

garden and can grow enough to keep a crock busy.
