In fact, if you take someone without Type 2, and they get too much iron in their system (from blood transfusions), they can develop Type 2. Also all the other symptoms of " Metabolic Disorder " . It's a well-known factoid, but not much discussed, for some reason. Excess iron in the blood is stored in the liver, heart, and pancreas, and it's incredibly damaging to those organs, esp. over several decades. When you take a random bunch of people and test their ferritin levels, the ones with the highest stored iron have the worst glucose problems. High stored iron (ferritin and raw iron) can still exist with very low blood iron (you can be anemic and still have too much iron in your body). Even stranger, when you take someone with Type 2, and have them donate blood, their insulin resistance gets better. Now for a whole slew of reasons, the United States diet promotes iron absorption big time. The Japanese diet does not. Some of this is meat choice (beef vs. fish), some is beverage choice (pop, beer or juice vs. tea or wine), and some is food additives (most starches in the US have added iron). It's not new research, but for some reason people don't know much about it and think it's a little crazy when I mention it. Studying the Japanese diet is a good start though: their rates of Metabolic Syndrome are very low, but their diet isn't low-glycemic. Interestingly, the Sumo wrestlers, who ARE fat (albeit not diabetic), follow a diet that is far higher in iron absorption (meat/root vegies/beer, vs. fish/rice/tea).
