Guest guest Posted March 22, 2011 Report Share Posted March 22, 2011 Most probably immediately above 40-50 C most microbes,koji mostly, in miso will die, however we can enjoy the benefits of microbes that fermented soybeans. Yet boiling temp of 100C will deteriate the nutrients of food and minerals as well as aroma, flavors and taste. So 60-80C is usually good temp in terms of cooking. MACROBIAL cooking methods are used below 50. Some acid in miso is said to help extract from internal radiation.
