If it's awful, I'll give you the chance to say " I told you so. " What recipe did you use? I've seen two very different types. One type is like the open fermentation of sauerkraut, the other an anaerobic brine and spice technique. In my experience, they are better if you leave some of the red on the rind. That gives the bacteria more sugar content to work on. If you need specific, step-by-step instructions, I can provide them when I have a bit more time.
