fizzy zip in ferments

Sorry for all these questions. Thanks for all your answers! One more ...

Some of my 21 jars of cukes have a fizzy zip to them and some have none at

all. I like it both ways, but I don't understand. Any thoughts??? Should

we eat the zippy ones first? Will they go bad sooner? Do particular

ingredients tend to cause this? I used the same recipe, making both the

dill and the sweet version.
