How Long to Ferment Kefir Water

How long should I ferment the kefir water? I've been leaving it out on the

counter for four days or so, but I'm not sure if it is too long or not long

enough. How do I know when it is done?

Also, I understand that water kefir has a bit of alcohol in it, from about .2

percent to 2 percent is the figure I read. I dilute it with water, but I don't

really want my kids (or me) drinking much alcohol. So I wonder how much alcohol

it really has, and if it makes a difference how long I ferment it. Any idea?
