I've been leaving it out on the counter for four days or so, but I'm not sure if it is too long or not long enough. How do I know when it is done? Also, I understand that water kefir has a bit of alcohol in it, from about .2 percent to 2 percent is the figure I read. I dilute it with water, but I don't really want my kids (or me) drinking much alcohol. So I wonder how much alcohol it really has, and if it makes a difference how long I ferment it. Any idea?
