I used the instructions in Wild Fermentation by Sandor Katz. Here is the question: What is the shelf life of the ginger ale? I have an event that I want to make lots of ginger ale for but don't know how long ahead of time I should prepare it. It requires a 10 day fermentation. How much longer will it keep? I will leave it in a basement which is cool but not as cold as a root cellar.
