Another nuka pickle question

Hi again,

Can nuka bran pickles be made in a large glass jar, such as the picklemeister

and kombucha jars sold at Wisemen Trading Supply (wisementrading.com)? Because

that's what I have.

Sure, anything you can get your hands into. Basically you need to be

able to get your hands in to stir it up and set the vegetables in it.

They sell premade nuka plastic bins in Japan: not very big at all and

full of pre-fermented nuka. The size is mainly dependent on the size

of what you want to bury in it.

Some gallon glass jars though are very wimpy ... the suntea jars

commonly are, and they tend to shatter at odd times. So use something

well made.

Once the nuka pot is ready to start producing nuka pickles, what vegetables work

well, and how long do you leave them in the pot? Do they need to be rinsed

before eating? I've been waiting for the weather to cool down before I try

this. It's almost time :)

Cucumber,Daikon,Carrots are my standard.

Duration for pickling depends on veges and temperature.

And your preference of fermentation,like rare pickled,midium,well and sour.

Peeling daikon and carrots are recommended for bright look.

Cucumbers are peeled one or two slashes.

Now cucumbers take 6-12 hours while carrots 12-24 hours.

Now Eggplants are delicious. Pickle them well.

Soy sauce dash and citrus squeeze. A saline jogger!
