Guest guest
Hi There, This isn't about fermenting tomatoes but still... To ripen green tomatoes you place them carefully into a brown paper bag or wrap loosley in newspaper. Place them in a dark cupboard or closet (farely cool) and then leave them for a few days or so - could be a week even. Check them every two days and you will find them ripening up just fine. When they are just about ripe then transfer them to a sunny window sill until they are fully ripened. They will taste almost as good as vine ripened... Cheers, Joanne <Here in the Northwest, it's common for the <weather to change just when the tomato vines <are loaded with big green tomatoes. So here <is what you do: <1. Pick them all (they will just split and rot otherwise). <2. Dry them off, and set them stem-side-down on towels <or cardboard. <3. If they have air circulation, they will actually ripen <eventually.
