With the fading aspect of summer here in southern New England, I have so much zucchini (and then some) that I am seeking some new and creative ways to process it for winter food. I have quite a bit vinegar-pickled, dried and frozen so far, and seek some new ideas . . . Got any? Guest guest Posted September 11, 2007 Report Share Posted September 11, 2007 Rose, I have fermented zucchini (lactofermentation). The flavor was ok; the texture somewhat mushy. You could try shredding some zucchini and mixing it with other vegetables to make a better product. My opinion of zucchini is has never been all that great. Others may differ. I may play with a *small* batch ! just for the experience!
