Guest guest Posted May 27, 2011 Report Share Posted May 27, 2011 Kale Chips (also cheesy dip)2 bunches of organic green kaletear into small pieces discarding the stemBlend in Vitamix1 cup organic raw cashews - soaked for 2-3 hours2 med. cloves of garlicpinch of salt 1/8 cup lemon juice1/3 cup red star nutritional yeast3/4 cup waterBlend until creamy. Toss with the kale and dehydrate for at least 8 hours at 105F.If you add less water to the sauce it will become a dip. More water to the sauce will make a salad dressing. I'm going to try the kale chips in my oven although the lowest temp. I can get is 170 as it's gas. I'll let you all know how it works out. I tore mine in palm size pieces as that is what I read most frequently on recipes and heard on youtube videos. We like renee oswalds recipe. Hers calls for a red pepper dressing and after tossing with dressing then sprinkle with ground (in VM) raw or soaked and dried sunflower seed. Husband has almost finished off the large container so its time to make them again. Cheezy Chili Kale Chips 1/2 c raw macadamia nuts 1/2 c water 1 clove garic juice from 1/2 lemon 1/2 tsp cayenne or chili powder celtic sea salt to taste 1 bnch of curly kale, washed and de-stemmed tear kael into bite-sized pieces, place in large bowl. you can increase the ingredients proportionately if you have more kale. Blen nuts, water, garlic, lemon and cayenne tog. and taste, adding sea salt as necessary. Mixture should be liquefied but is fine if there are still small pieces. Pour over the kale, massage mixture well, distributing throughout all the pieces. Place pieces on parchment or non-stick sheets, dehydrate 1 hr at 145. Lower temp to 115, dry about 4 hours. Turn over and dry until crispy. You can shut dehydrator off for 1-2 hrs to allow internal moisture to surface and then re-dry for another hours or two. Kale chips store longer and taste better when completely dry.
