I have been using water grains lately for kefir beer a la Heidi's

recipe, and there seems to be no difference in the final product. Also,

I think the grains continue on, whereas milk grains fizzle out after a

while.

I would be interested in getting a water kefir beer recipee if you would post

one. how is it different from plain water kefir? thanks.billie

Well, I have about 1/2 cup of them and they make a nice sodalike kefir

beer in one day. It will get hoochy not long after that. So honestly,

I have too many - a few tablespoons'll do ya.

a half cup of water kefir grains... ? to how much water are you talking?? a

half gallon jar??

Monday I made Heidi's kefir beer recipe (porter variation) (gal of water) with 2

Tbs of active water kefir grains. After 24 hrs there was no bubbling activity

with " bottle gas plug thingy " , so I added 1 Tbs of water kefir grain more. That

was 12 hrs ago and still no activity. Any ideas as to what is happening or IS

NOT happening?

Yes exactly. My apologies for being so vague about that. I use 1/2

gallon of juice with 1/2 cup kefir grains.

The kefir grains don't produce much bubbling, esp. on the first batch.

In that way they work a lot like lambic ales, which also are slow

getting going.

If you save the dregs, you'll get quicker action on subsequent batches.

I think it's because the bacteria in the kefir start working

faster than the yeast, and the yeast are what causes the most

bubbling. But I've never made a batch of kefir beer that bubbles

like a yeast beer does. They've never got bad though: and they

taste good!

Thanks...5th day and I see bubbles forming at the top of the water line of

mixture.

Are you thinking that since this is my first batch that few bubbles will appear

at all? If so, then with the water kefir grain beer how will I detect that it is

done?

What I do is, I smell it. Or taste it. It's done when you say it is done.

Actually I've drunk it at all stages. When it's not very fermented, it's

just a nice sweet drink. Later it gets not-sweet (which is when I like

it the best), and later it gets sour-ish (but still good).

If it isn't " done " but I'm thirsty, I mix it with fizz water, because

I don't like sweet drinks much.

I've also made it in a " sun tea " jar, with a spigot at the bottom.

You can only get away with this if you filter it before putting

it in (so hops bits don't clog the spigot). But then you

just keep adding juice or molasses or whatever to the top,

and pour from the bottom. Like, the never-ending keg ...

guess I need to get Water Kefir grains. Where do I get those? Or are

regular kefir grains ok?

Do I need to rinse them?

Don't sweat it. Regular are fine to use, but they fizzle out after

several months, as I guess they are really designed for milk. I am

pretty dairy free, so trying to keep milk grains going so that I can use

some of them as needed for juice just was not a good plan for me. Water

crystals work fine and give exactly the same results for me as the milk

grains, without the ferments becoming super yeasty as the grains

morphed. But if you make milk kefir, then use the extra milk grains as

you choose.

Well, if your milk grains are soaked with milk, you may want to rinse

them initially before setting them in juice. And heck, I like Heidi's

endless keg idea that she mentioned recently - no rinsing required. I

could see us having endless keg parties if we ever got together as a

group, lol.
