I take the low-sodium V8 juice to help control blood pressure and other circulation problems (Alternative Medicine has many links to the substances in tomatoes that are helpful, especially cooked tomatoes, which is why the so-called Mediterrean diet is a pretty healthy one, along with the lavish use of olive oil and many other veggies). And I cannot tolerate very well raw tomato juice or orange juice, for that matter. I do tons of fermented raw veggies otherwise, kimchi and kraut. Another good reason is that I live in the middle of nowhere in the boondocks and cannot drive my 70-yearold butt to/from the organic food store and hour away, but once a week. Convenience and expense are big motivaters in regards to my desire to eat healthy at this stage of my life. But your point is good, and I will try fermenting my V8. And when that's not possible, I will continue to mix kefir with it.
