Soap residue could be bacteriocidal.

If you don't feel like making kefir every day, you can make a big batch and keep

it in the fridge. It gets more tart the longer you store it, but it also gets

more B. Vitamins and Folic Acid. If you're going to add fruit and make

smoothies anyway, it doesn't matter.

I don't wash my jars every day. When they get a bit cheesy around the top, the

dogs get to lick them out and they go in the dishwasher. You are right that

soap is a very bad thing for kefir, so be sure to rinse the jars very well when

hand-washing.

You can drink to bowel tolerance. For some that would be a quart, others a

cup, sensitive ones 1 teaspoon.

It is just as safe as the next food. You can get too much of anything. Your

body will tell you if you've had too much.

It can. Or it can do the opposite if your magnesium is low by nature of the

milk which already has an overbalance of calcium to magnesium by 7:1. I tell

people to take more magnesium if the kefir is constipating.
