Guest guest Posted November 6, 2005 Report Share Posted November 6, 2005 hi betty thank you for that site on YCK and when can i'll send for the starter kit , but could i not get that at the natural food stores ???? maybe not , but i also tried getting in on chat to ask questions but they say join the room , i thought i did , so if i ,,,im not sure how to i guess ,but i bassically wanted to know how to make simple kefir and simple fermented food such as saurkraut and other veggies to do,, you know of any site that are simple to follow ??? Guest guest Posted November 6, 2005 Report Share Posted November 6, 2005 , this is the site that is very active with beginners on the BED beginnerBEDROK/ but a lot of them use the Body Ecology Keifr and Body Ecology culture starter for vegetables. Personally, I do not like the taste of my cultured veggies using the starter. I much rather use sea salt. I added enough gallons of cultured veggies using the started to my compost pile before I gave up. It is suppose to have many different enzymes that would not be in the cultured veggies using sea salt but if I cannot stand to eat it, it is of no use to me. There are some on the list who use the grains to kefir their milk and water grains to kefir their coconut water. Most on that list have children with autism and they are working on using the Body Ecology Diet to heal their child/ren's gut. **** Here is the recipe that I use for sauerkraut Put shredded cabbage in bowl. Mix in 2 teaspoons salt for each pound of cabbage. Compress by tamping with wooden block until juices appear (salt is working). Pack tightly into jar. If necessary, add enough water only to cover cabbage. Obtain plastic bags. Put 3 bags together -- one into the other. Bags should be large enough to seal the crock that is being used. Fill the inner bag with sea salted water for weight. Sauerkraut is a powerhouse of superior lactic acid, enzymes and other important nutrients necessary for good nutrition. *** , have you checked the list's files? I notice that there is another group that is suggested for fermented vegetables. Kimchi-Sauerkraut-Cabbage/ ** Have your read Snador Katz' book WILD FERMENTATION? or Sally Fallon " s book with Enig, NOURISHING TRADITIONS? It is credited by my docs for preventing the cancer from advancing further into my colon and into my lymphatic system. I am familiar with Kefir, but didn't know it had so much probiotic bacteria. My stools have never really gotten back to normal (they are thin, but not as much as when I had the cancer). But my physical body is all back to normal and that is enough for me. If you could explain the floaters vs. sinkers for me though, I'm interested and with good reason. Thanks for the very important info and for a good laugh too!
