young coconut logistics, coconut water kefir

[steve-o] I just had a quick question about young coconuts.....I

cannot find them

around here, one store used to carry them...but they didn't sell

enough, and quit

carrying them. I did ask if they would order me a case and they said they

probably could, but would I be able to use a whole case before they went bad?

I'd like to use my extra kefir grains with the young water, and I just LOVE

the young coconut meat, makes a great smoothie! Anybody help me out here? Can

we freeze any of it? Can I just culture the whole case at once somehow?

[Darrell] I would think you could drain the whole case of your young coconuts

and freeze the liquid, using it later as needed.

[MAP] You could also just freeze the whole coconut as is. I've done

this myself a few times with great success--uh, actually by accident

this past winter when I forgot to take them out of my car after a

shopping trip... :-)

It might be best to defrost the coconut water quickly using the hot

water bath technique instead of a slow defrost or putting the grains

in near-frozen water.

Another thought is simply that if you eat one coconut per day

(probably a great idea for a lot of people), drinking the water fresh

or kefired and using the meat for any number of different dishes,

including just scooping it and eating it fresh and plain like I often

do, you'd go through a case (12 usually I think) in less than two

weeks. They're fine in the fridge for about two weeks or so in my

experience, and often longer, but they do gradually lose their

freshness and it's better not to push it. So you could buy two cases

once per month, freeze one case and use the other case fresh in less

than two weeks.

I've recently been making kefired coconut water pretty more regularly

than before and I'm rather enjoying it. Someone on another list once

reported great results with the simple variation of adding mint leaves

in the beginning, giving a great flavor. I haven't tried it yet, but

any day now...
