How do you tell if CSY is good. I received mine from Ed today and it

was the consistency of milk. Ed never seem to answer my emails.

It should thicken up after about twelve hours. What ratio of

CSY to new milk are you using? The usual is 1:5, but with a

new starter, you might try a 1:2 or 1:1 until you get a thicker

batch, at which time, you can slowly build up the quantities

and also get back to the standard 1:5 ratio of CSY:milk.

If it still doesn't take, then I would guess something killed

the little critters. :(
