Guest guest Posted May 13, 2005 Report Share Posted May 13, 2005 It should thicken up after about twelve hours. What ratio of CSY to new milk are you using? The usual is 1:5, but with a new starter, you might try a 1:2 or 1:1 until you get a thicker batch, at which time, you can slowly build up the quantities and also get back to the standard 1:5 ratio of CSY:milk.
