After the six-week-period in which I went from 130 to 170, I haven't gained a pound, but I'm wary. Harper

I know that slow oven roasting thin slices of onions, carrots, hard squashes (such as acorn, Hubbard) beets, sweet potatoes, etc. results in a lovely sweet taste. They should be very lightly brushed with olive oil for the best results, and the process is just a little easier and uses a little less oil if you put them on a Sil-Pat for baking. If you have fresh thyme and a little sea salt to sprinkle over them, they're even better. I asked whether your doctor had given you the diabetic diet. I was interest because I've seen a friend, newly diagnosed, successfully lose a huge amount of weight in a short time with his diet for diabetics. I worry about the possibility of developing diabetes, now that I'm overweight for the first time in my life, but I don't seem to know quite what to do about diet. "Just eat less" sounds simple, but - - -. Harper I will have to check into that. I mainly eat only rawveggies. I lov'em! Yummy! But I just love Beets too.So I will difinately check into this. What diet plan is your friend on, or do you know? Could you find out maybe, if it's not too much trouble?? Do you have reason to believe that you could be Diabetic?Just being over-weight doesn't mean that you can get it for sure. I am not saying you are over-weight, but just curious to why you may be concerned??? Eating less is always better for anyonethat may or may not be over-weight! Guest guest
.. I know that people with AIH, taking Prednisone, are at special risk for developing diabetes. Harper, my sister had to go on prednisone for awhile for a non- AIH condition. She soon developed diabetes. I know that her diet and exercise habits prior to the medication made it an easy transition into diabetes. As a result, even though my levels have been manageable - I have made changes. I have cut down my sugars and started looking at diabetic diets. My rationale is to head it off at the pass. Oh dear God! What a dreadful "Western" cliche - I guess it IS time for me to go back to Montana. (dx'd AIH 1/02)
