Hello Irene,

Here are a couple of Pate' recipes you might try. If he doesn't like the

taste of liver, you might do something similar with ground poultry or

meat.

Chicken Liver Pate'

1 pound of organic chicken livers, cooked

4 teaspoons of meat drippings (from roasted chicken, meatloaf, roast,

etc.)

1 teaspoon of fine ground organic nutmeg

2 teaspoons of dry organic mustard

Dash of organic cayenne or hot sauce

1 cup of organic sweet butter, softened

1/2 teaspoon of fine ground organic cloves

1 teaspoon of celtic salt (or more to taste)

1/4 cup of organic onion, minced

Boil livers with salt, covered, for 20 minutes, or until tender.

Drain, put through food chopper, using fine chopper. To insure equal

distribution of spices, mix all dry and liquid ingredients together,

dissolving any existing lumps in the dry spices. When completely

homogenized, mix with the chopped liver and butter. Blend thoroughly and

chill. Use as a spread on celery or roll in lettuce leaves.

Spiced Chicken Liver Pate'

3/4 pound of organic chicken livers

1 medium organic onion, finely chopped

3/4 cup of organic sweet butter

1 1/2 cup of chopped, cooked chicken, turkey or pork

1/2 teaspoon of celtic sea salt (or more to taste)

1/2 teaspoon of organic cinnamon

1/4 teaspoon of organic ground mace

1/4 teaspoon of organic dried thyme leaves

1/8 teaspoon of organic ground paprika

1/8 teaspoon of organic white pepper (black pepper can be used)

1/8 teaspoon of organic ground cloves

1/8 teaspoon of organic allspice

Chopped organic parsley for garnish

In a large frying pan, sauté chicken livers and onions in 1/4 cup

butter over low to medium heat, turning and stirring livers until

lightly browned, about 10 minutes.

Transfer chicken liver mixture to a food processor. Add cooked chicken

and seasonings. Process until mixture is pureed.

Cut remaining 1/2 cup butter into pieces. Add to chicken liver mixture.

Process until fluffy.

Spread chicken liver mixture in a mold or crock. Cover and chill several

hours or overnight to blend flavors. Makes 3 cups.

You are most welcome Irene.

By the way, are you trying to stay away from dessert type recipes for

your 5 year old? If not, I have a couple of recipes that may help

increase the butter in his diet (if he takes a liking to them) that

are within Bees food list.
