Hey Tony,Sorry that I've never tried to make a BBQ sauce, but ran across this and it looks like a good resource for trials (and hopefully not too many errors :-)

Yeah most don't look too healthy. They are loaded with sugar. Might as well stick with jar sauce.

Figured if I had a decent one I'd modify it to make it Paleo.

Ask your customers at your demos. I'm sure one of those guys with a 15+ year old machine probably has a recipe.

I'd use stevia - that is my go to sweetener. I'm used to the after taste. Sugar wreaks HAVOC with my blood sugar levels and energy, so I'd rather put up with the after taste (which I'm now immune to) than consume sugar and feel like poo...

This is from the Barefooot contessa. I've used it before because its quick, but

I do like to let it simmer. I'll usually make it quickly then toss it in a tiny

crockpot to bubble blissfully til time to serve, then just sit crock out on the

buffet....It uses honey and its not overly sweet, I don't think. But you could

probably sweeten with dates, too. I've not tried that, but I think it sounds

like a good idea, since the 'quick' nature of the recipe leaves it lacking in

depth, imo.

1 1/2 cups chopped yellow onions (1 large onion)

1 tablespoon minced garlic (3 cloves)

1/2 cup vegetable oil

1 cup tomato paste (10 ounces)

1 cup cider vinegar

1 cup honey

1/2 cup Worcestershire sauce

1 cup Dijon mustard

1/2 cup soy sauce

1 cup hoisin sauce

2 tablespoons chili powder

1 tablespoon ground cumin

1/2 tablespoon crushed red pepper flakes

1 In a large saucepan on low heat, saute the onions and garlic with the

vegetable oil for 10 to 15 minutes, until the onions are translucent but not

browned.

2 Add the tomato paste, vinegar, honey, Worcestershire sauce, mustard, soy

sauce, hoisin sauce, chili powder, cumin, and red pepper flakes. Simmer

uncovered on low heat for 30 minutes.

3 Use immediately or store in the refrigerator.

4 The Contessa recommends using this with about 2 1/2 to 3 pounds of chicken.

Just marinate it in 2/3 of the barbecue sauce for a few hours or overnight in

the refrigerator, then slap it on the grill. Serve it with the extra sauce on

the side!

Both of those are unnecessary. You could easily add an anchovy, a little molasses, raw apple cider vinegar, etc. If I were to make it, I would use a couple of my paste tomatoes that I grow (Principe Borghese) which are dried on the vine. You could slow roast them to develop flavors, then add some brown sugar, spices, herbs, etc. The good thing about bbq sauce is that it can have a lot of variations. A healthy squeeze of fresh lime would give it some punch too. It sounds like one of those recipes that would be fun to experiment with, but could hardly go wrong no matter what you did to it. I would be inclined to throw a bunch of goodies in my solar oven and then into the Vitamix to see what came of it.

THey might contain those ingredients if you buy them, I'm not sure...But here

are some recipes I like. They are pantry staples that I like to have on hand

anyway--can't imagine not being able to use them at all, that'd be a real

bummer. Plus the store-bought hoisin is crazy spendy, expecially the the BBQ

recipe which requires a full cup.

Hoisin:

5 tablespoons soy sauce

3 table spoons of peanut butter

1 1/2 teaspoon of honey

2 tsp. sesame oil

2 tsp. hot sauce

1/4 garlic powder

a dash of white pepper

Throw in VM and blend. Store in fridge.

Worcestshire:

(there are better recipes, but they require a 2 week fridge rest before use.

this one is good for effort/outcome ratio)

1/2 cup apple cider vinegar

2 tablespoons soy sauce

2 tablespoons water

1 tablespoon brown sugar

1/4 teaspoon ground ginger

1/4 teaspoon dry mustard

1/4 teaspoon onion powder

1/4 teaspoon garlic powder

1/8 teaspoon cinnamon

1/8 teaspoon pepper

an anchovie or two

Toss in VM to blend. Pour all ingredients in a medium saucepan and bring to a

boil, stirring constantly. Simmer 1 minute. Cool. Store in the refrigerator.
