Cabbage rejuvelac contains high amounts of lactobacillus probiotics which aren't contained in sauerkraut. 95% of the good bacteria in the gut are lactobacillus. Cabbage is fermented using salt which changes the type of bacteria in the final product and it is fermented longer than rejuvelac so the type of bacteria produced are different. Should I change to another kind? > , no you can have salted sauerkraut. If you make cabbage rejuvelac, which is fermented only 3 days for the 1st batch, do not use salt in it.
