Guest guest Posted November 21, 2007 Report Share Posted November 21, 2007 Hi Joe, I love the Kimchi Recipe in the files. Instead of the daikon/carrot in the recipe I use broccoli stalks. It is also made with nappa cabbage instead of regular cabbage. I love it. I have not done a straight fermenting process with out any type of cabbage though. But if you are looking for fermenting variety, swapping out low carb veggies in the Kimchi Recipe is great and you get a different taste with each variation. I have substituted the daikon/carrot also for bok choy, that was great too. Sometimes I've used 4 differents kinds of radish along with bok choy or swiss chard. I haven't tried broccoli, but you can ferment any vegetable you wish. It takes 3 days to ferment it.
