They eat it in the fall over in Russia to build up immunity for winter. She's eaten about 3 cooking pumpkins so far, and is going to eat one more. She can't believe people in America buy all these cooking pumpkins and put them on Fall Displays in their yard. (The white-ish ones, not the orange ones). If you click on the files and then go into the files located just to your left upper corner on the forum page you will find the 5th file down, a file named: Candida Diet & Shopping Lists & All About Foods If you go into the file and print out the Candida Shopping List Bee has prepared for us, it will be a great help to you and your wife in knowing what foods you can or can not eat on Bee's wonderfully healthy program. It's all there, what you can eat on Bee's program. (What you can not eat, is not on the list, so that makes it easy, just stick to the list and you will do fine.) I think Spagetti Squash is the only thing close to pumpkin you are going to get on the list. I myself had a reaction to it, and can only have small servings of it if I do. I assume the criteria is 3 or 6 per cent carbs or less. Variety would add interest and more nutrition to the diet.
