And though I don't know much about candida and kids, with me, undigested food was not from lack of chewing but from poor digestion and low stomach acid from having a candida overgrowth. Also, I was diagnosed a celiac awhile back. The cool thing is that as I work to rid myself of my candida problem, improve my digestion, and eat more nutritious foods, my sensitivity to wheat has decreased. Originally, I was so senstive that I couldn't even eat from containers that had had wheat in them at one point. The cool think now is that this last thanksgiving, I had some turkey, and before I realized it, I ate some that was covered with stuffing. Back when I was diagnosed a celiac, that would have been enough to make me sick for days. This time, I didn't have one reaction. Granted, it was only a really small exposure, but it shows, to me, that candida, poor nutrition, and lack of nutrients is more the culprit for celiacs disease then just wheat alone. It also shows me that it is a condition that can be cured and not something you have to live with the rest of your life. Its interesting to note that wheat, becuase of the way it is processed and stored, is one of the most contaminated foods with fungus/mold/candida as well as mycotoxins (the toxins that fungus/mold/candida produce). This contamination is enough, on its own, to explain adverse reactions to wheat. Check out the folder Candida Diet & Shopping Lists & All About Foods and read the file named " Mycotoxic Foods - Top Ten " for more information on this. Also, grains have enzymes in them that upset digestion. Therefore, if grains are not soaked and prepared properly prior to eating, that can cause problems too. And as most commercially sold grains are not soaked and prepared in a way to reduce those digestion disturbing enzymes, grains by themselves, even without contamination, can cause problems. Read the file " Soaking & Fermenting Grains, Nuts & Legumes " for more information on this. So between the mold fungus/mold/candida in wheat, the toxins present in wheat, and the fact that wheat is not processed properly, all three of these facts can make many people sick. And the worse your immune system is and the more health problems you have, the more likely you will develop an adverse reaction. My advice to your friends who are celiacs would be to try Bee's diet. It can't hurt, and I bet you they will feel better for it after they have been on it awhile. Just know that everyone who has candida has celiac disease, and that being diagnosed with celiac disease means the person has poor digestion, a low immune system, etc., so this program would correct it. This is just as much a healing program as it is for curing candida. I had celiac disease too, but after curing my candida I was totally okay with any gluten grains.
