I think the sugars (it is sweet tasting, although it is high in fat) and especially the fibrous nature of the meat can make it difficult for many Candida sufferers to digest (I know I can speak for myself at least). Some time ago I remember I was eating shredded coconut, fresh and organic form, and it essentially came out the other end the same way it went in.
