I got (plain) pork fat from the health food store but Bee said it needs to be rendered first. I haven't figured this out yet. Are we talking about the same kind of pork fat? (I got it for free, it's the stuff butchers discard or give to the cosmetics people who stop by to pick it up). : would you please email me offlist. I'm curious as to your brand of digestive enzymes! Chris. --->Chris-Put your chunk of fat in a pan large enough to contain the fat as it is melted down. Turn on the heat (medium works) and watch it melt. You would want to stay nearby for safety reasons. You will see when it is completely melted down. I strain mine by pouring it through a large sieve with lined with a paper towel. Bee recommends unbleached paper towels or cheese cloth. I set the sieve over my 2 quart sauce pan. After it cools a bit I put it into my greese pot that I keep out on the counter.
