goggled it, but can't find a site that tells me if there is high carbs

or not. I have fresh parsley growing in my garden (only for a short

time yet). I would like to use the root as I have read that it better

than doing chlorophyll. I tried some and it is very tasty, but I have

now started itching. Maybe it is just a fluke that it happened at the

same time.

==> Deb, I don't know whether it is too high in carbs, but if you do

okay eating it, eat it in moderation and let us know how you do.

I was able to find the nutritional info here:

http://www.melissas.com/catalog/index.cfm?Product_id=238 & Info=YES

2/3 cup contains 2 carbs and 1 gram of fiber.

Thanks for the help to everyone that responded. There must be a lot

of hidden sugar in the root as I really had major itching everywhere

after eating only 3 small roots. Darn, as I think they are very

healthy other wise.

Don't be so sure it is hidden sugar. Parsley leaf and root is often

used as a detoxifier because they contain such a high amount of

concetrated chlorophyll. I don't know if you use th leaf as a

seasoning our not, but the root is a ton more concentrated.

Could just be a detox reaction, this would be my guess
