There must be a lot of hidden sugar in the root as I really had major itching everywhere after eating only 3 small roots. Darn, as I think they are very healthy other wise. Parsley leaf and root is often used as a detoxifier because they contain such a high amount of concetrated chlorophyll. I don't know if you use th leaf as a seasoning our not, but the root is a ton more concentrated.
